First thing this morning, even before breakfast, I had dinner in our slow cooker- split pea soup. And while I was finishing off dinner- cooking quinoa, adding frozen peas- dessert was cooking in our oven.
Normally we aren't a dessert family. I typically serve it when we have guests, and I prefer to think of it more as a treat, and less of an expected part of a meal. Tonight I thought I'd try something new with classic apple crumble. I cut down on the butter and sugar, added a taste of maple syrup, used some chia and chopped walnuts. I omitted flour completely, which makes this suitable for a GF diet. I also used a ready-made granola- 38g of whole grains per serving- as a shortcut, just because I felt like it.
Truth be told, I don't know if my family will like this since there's no room in the freezer for ice cream, but I do know I will. I suspect this will be my breakfast for a few days this week. Which is ok with me, because who doesn't like dessert for breakfast?
