1.5 c. sliced cucumber
1.5 c. sliced red grapes 1/2 red onion, diced finely 1/2 tbsp. extra virgin olive oil 1/2 tbsp. balsamic vinegar 1/8 tsp. salt Fresh ground pepper, to taste 1 tsp. fresh thyme leaves (or 1/2 tsp. dried) 1/4-1/2 c. crumbled feta 1 lemon, zested Sliced lemon, garnish (optional) Mix cucumber, grapes, onion, oil, vinegar, salt, pepper, thyme, and half the lemon zest together. Refrigerate for 30-45 minutes, if possible, to allow flavours to blend. Just before serving, remove from fridge, toss in the feta cheese, and dish into individual servings.
