First thing this morning, even before breakfast, I had dinner in our slow cooker- split pea soup. And while I was finishing off dinner- cooking quinoa, adding frozen peas- dessert was cooking in our oven.
Normally we aren't a dessert family. I typically serve it when we have guests, and I prefer to think of it more as a treat, and less of an expected part of a meal. Tonight I thought I'd try something new with classic apple crumble. I cut down on the butter and sugar, added a taste of maple syrup, used some chia and chopped walnuts. I omitted flour completely, which makes this suitable for a GF diet. I also used a ready-made granola- 38g of whole grains per serving- as a shortcut, just because I felt like it. Truth be told, I don't know if my family will like this since there's no room in the freezer for ice cream, but I do know I will. I suspect this will be my breakfast for a few days this week. Which is ok with me, because who doesn't like dessert for breakfast? How was your Sunday dinner tonight?

Your dinner sounded great! The apple crumble turned out very nicely. So good, in fact, I hope no one else eats any so I can look forward to having it for breakfast this week, lol. This is the granola I used! http://www.northerngold.com/granola.html
