First Full Week of Soccer - dinners!

It's been a challenge for me to keep things straight in my head this week. I've had meetings and appointments on most days, but if I know what's for dinner in advance that helps keep my head above water, because that's one less thing to worry about.
The beauty of my all-in-one meal was leftovers. We've got enough left for dinner tonight if I extend it with a salad or a vegetable and fruit plate, which makes me happy- I've got something going on later this afternoon, too, and that's easy enough for the family to get on their own.
If you and/or the kids are in extra curricular activities, what's one thing you're doing to help keep you organized?
