Yesterday was hot and muggy. Not as hot as it has been, but hot enough. However, I was determined to package up as many meal starters as possible for the freezer, so I cooked a pork loin from Costco while my husband barbecued a whole chicken. I also cooked a large pan of Actifry fries outside. There are enough leftover fries to serve with dinner today, which cuts today's cooking time down as well.
All told, I cooked once- and have 11 meals started: 8 ready to go in the freezer, 1 to eat today, and 1 to eat tomorrow, and some chicken bones to cook into stock this coming weekend. Turning the oven high (500*) for not quite an hour wasn't the most fun, but I am really happy with the results. What are some of your tips for cooking ahead?
